In the mid 1800’s the Barnard family settled in Saint Lucia as greatly respected merchants and traders. Third generation Denis Barnard took over his father’s sugar plantation at the age of 21 and established the Dennery distillery. He was an original pioneer in the art of blending rum and began experimenting from molasses produced by the plantation’s own sugar factory. His philosophy and technique of blending different distillates created a unique and captivating spirit. He produced a consistently smooth, high-quality blended product. It is with this inspiration that his son, Laurie Barnard, founded Chairman’s Reserve. Laurie first experimented with blending respective casks of pot still and column still rums; and then returned the blended rum back into oak barrels to marry together. He constructed a smooth and complex well-balanced spirit that is now considered the benchmark for Saint Lucian rum.

Chairman’s Reserve distillery is nestled in the Roseau Valley on the West coast of Saint Lucia, in the rain belt of the island in close proximity to the hills, the sea and the Roseau River. This location affords a microclimate that creates the ideal conditions for amazing maturation of our rums. The transformation of the rums as they age is comparatively superior, giving our master blender the ideal foundation from which great rum blends can be created.

Ingredients
50ml Chairman’s Reserve white rum
25ml lime juice
10ml sugar syrup
ice

METHOD :
Shake all the ingredients in a cocktail shaker and strain into a cocktail glass.”

Ingredients:
1 oz. Chairman’s Reserve Rum
1 oz. Rhum Agricole
½ oz. Créole Shrubb
¾ oz. orgeat1 oz. fresh lime juice
Method: Shake all ingredients with one cube and pour into glass. Top with crushed ice and garnish with Mint sprig.

* A COMPLEX BLEND : “Legacy” is a blend of rums that honours the contribution of Laurie Barnard to the creation of Chairman’s Reserve and showcases the Art of Blending which was central to his philosophy. The blend contains rums from both the John Dore and Vendome pot stills, as well as our Coffey still. In addition to traditional molasses based rums the blend is freshned and balanced by the addition of sugar cane rum made entirely on our estate in Roseau. This rum is fermented using wild yeasts and is distilled in the John Dore pot still. The resulting blend is the embodiment of the vision Laurie Barnard had for St. Lucia Distillers.

Light amber mahogany core with an intense yellow rim. Sweet raisin butterscotch aromas blend harmoniously with tobacco, vanilla and banana.
A slight grassy vegetal aroma from the sugar cane rum.
On the palate rich hedonistic “” crème brulée””, vanilla and a hot gingery mouth feel.
Intense and complex but with a soft easy drinking personality, the rum has a long and lingering finish. ”

Ingredients
2 oz. Chairman’s Reserve LEGACY
6-8 leaves + generous sprigs of mint
1/4 oz simple or cane syrup
Method
Add mint and syrup to julep tin and lightly muddle. Add rum and crushed ice and give a stir. Top with more crushed ice and garnish with a bouquet of mint. ”

EXTRA AGED SIPPING RUM: ‘The Forgotten Casks’ starts with aged rums of both Coffey Column stills and copper pot stills. The selected rums are aged separately in ex-Bourbon barrels during a minimum of 6 years, then blended and rested for an additional six months to finish.

TASTING NOTES : Rich, dark , gold mahogany colour with an intense nose of sweet raisins, cigar tobacco, amber honey and vanilla. A warm palate offers grilled tropical fruit and candied walnuts rounded with soft spiced that persist through a long wonderful finish.

“FORGOTTEN OLD FASHIONED
2 oz. Chairman’s Reserve Rum
1 teaspoon sugar
3 dashes of Angostura bitters
Large orange zest
Muddle the sugar and bitters in an old-fashioned glass. Add large piece of ice and add Chairman’s Reserve Rum. Stir gently and finish with a twist of a orange zest”

* CELEBRATING 90 YEARS OF HISTORY: : This rum celebrates the inauguration of a new distillery in February 1931 on the east coast of Saint Lucia, near Dennery in St. Lucia. The Distillery was founded by Denis Barnard and produced rum until 1972 when St. Lucia Distillers was formed out of the merging of the Dennery distillery and the Roseau Distillery. The Dennery distillery was closed as a result of the amalgamation but rum making continues at Roseau on the west coast of Saint Lucia

” * THE ART OF BLENDING : Chairman’s Reserve 1931 is a result of an extremly complex blend of distillates from our Coffey still and three copper Pot Stills.
90% of the blend is from a molasses base while 10% is from fresh sugar cane juice fermented with natural yeasts and distilled in our John Dore Pot Still.”

* TASTING NOTES : Vibrant medium gold core with bronze rim. Sweet raisins with definite toasty oak notes, leather, spice and tobacco on the nose. Rich sultana fruit with hints of crème caramel and buttery oak on the palate. A long complex finish – at first sweet raisin fruit then dry and tannic from the oak. A hint of grassy aromatic sweetness from the sugar cane distillate gives a unique, hedonistic but balanced element to the rum.
